    Valorization of Black Plum Peel in Spread Formulation: Optimization of Physicochemical and Sensory Properties via RSM

    Plum peel is a major by-product of plum processing and a rich source of nutrients and bioactive compounds. This study aimed to optimize a black plum peel spread formulated with apple puree (20–40%) and plum puree (10–30%) using response surface methodology (RSM). Increasing apple puree up to 30% reduced acidity, firmness, cohesiveness, and consistency while improving sourness and overall acceptability. At 40%, apple puree decreased total acceptability and sourness while slightly increasing texture parameters. Increasing plum puree up to 20% lowered acidity, firmness, consistency, cohesiveness, viscosity, and sourness, but further increases to 30% reversed these effects. Both apple and plum purees enhanced antioxidant capacity in a concentration-dependent manner. The interaction between apple and plum purees notably affected the viscosity of the spread. Overall, plum puree had the strongest influence on texture and color, while apple puree primarily affected sensory acceptance. The optimal formulation was 32.01% apple puree and 28.16% plum puree (R2 = 0.999). Developing a spread from black plum peel demonstrates a sustainable strategy for upcycling fruit-processing waste into nutritious, high-value products. This approach reduces environmental impact, supports circular food production, and creates new opportunities for functional spreads in the health-oriented food markets.

    Identification of genetic biomarkers to predict the response to nutritional therapy in patients with Type 2 Diabetes

    Introduction: The identification of genetic biomarkers to predict the response to nutritional therapy in patients with type 2 diabetes (T2D) has become a promising area to improve the response to therapeutic interventions. In addition, biomarkers are of great help as biological determinants, to study, evaluate and determine Diabetes Mellitus 2. Objective: To analyze the genetic biomarkers associated with the response to nutritional therapy in patients with type 2 diabetes, in order to contribute to the development of personalized strategies that optimize metabolic control and improve the effectiveness of nutritional treatment. Methodology: Systematic review based on PRISMA. 15 studies published between 2018-2023 in databases such as PubMed, Scopus, Scielo, etc. were included. The inclusion criteria were articles on genetic biomarkers, original, systematic review, case studies. Publications prior to 2017, theses and duplicate articles, articles without free access were excluded. Results: The findings highlight the importance of polygenic markers and epigenetic factors, such as DNA methylation, in predicting therapeutic outcomes. Furthermore, the influence of dietary patterns on biomarker expression emphasizes the potential of personalized nutritional strategies in the management of type 2 diabetes. Conclusion: Despite advances in biomarker research, further studies are needed, particularly in Latin American populations, to develop effective interventions tailored to genetic profiles. This study underscores the importance of integrating genetic and environmental factors to improve clinical outcomes in the treatment of type 2 diabetes.

    El tamal lojano como patrimonio vivo de la gastronomía del Ecuador
    El patrimonio culinario refleja la tradición y la historia de una región a través de su cocina. La ciudad de Loja, en Ecuador, con sus platos típicos, los cuales han sido elaborados y adaptados a lo largo del tiempo en respuesta a los cambios de consumo. El tamal lojano forma parte esencial de la alimentación de la región, y su preparación facilita la interrelación cultural entre el sector productivo y la sociedad. Esta investigación tiene como objetivo identificar y comprender los procesos y la evolución de los ingredientes que intervienen en la preparación actual y su permanencia en la cocina local, considerándolo un componente importante del patrimonio cultural intangible. La investigación es de tipo cualitativo, utilizando técnicas de observación, entrevistas y revisión bibliográfica. Los resultados obtenidos se analizaron considerando aspectos como la distribución geográfica, los tipos de relleno, la base de la maza y los métodos de cocción.
